Allergy Free Chocolate Peanut Butter Balls

So I have these Chocolate Balls I LOVE. Thought I would share with ya. I can't remember where mom got the recipe. Sorry


Break up the chocolate. I use a whole chocolate bar from Trader Joe's. The Dark Chocolate is everything free. Remember one whole bar.


Melt the chocolate bar, and add 1/3 cup coconut milk, and 1/3 cup peanut butter or sunbutter. Mix up well and put into freezer for 20-25 minutes until it sets up.


Roll into balls and serve. Well you can cover in chocolate, but we never make it that far.

Allergy Free Chips Ahoy Cookies

So my mama got a recipe in her in box for gluten free Chip Ahoy. I took one look and know I just had to make those. But I was going to make them my way....

Allergy Free Chips Ahoy
By Nicole Hunn Gluten Free On A Shoestring
Adapted By Coleson Dingerson

Ingredients

First mix

1/2 cup brown sugar
4 tablespoons earth balance soy free butter
4 tablespoons coconut oil
1 1/2 teaspoons pure vanilla extract
Egg Replacer mixed with sparkling water and set side for a few minutes.

Mix and then add.

2 cups (I used 1 cup brown rice and 1 cup tapioca flour)
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
9 ounces semi-sweet chocolate chips

In the end I had to add some coconut milk to get this into a dough.
I believe 1/4 to 1/2 cup.

Roll into a log and put into freezer for 15 minutes. Take out, slice and bake.

Bake at 325 for 14-16 minutes.

Allergy Free Double Chocolate Zucchini Bread

If I do say so myself this is one Greattttttt Zucchini Bread.











Allergy Free Double Chocolate Zucchini Bread

1 Cup Pumpkin (2 Eggs)
1/3 Cup Local Honey
1/2 Cup Olive Oil
1/2 Cup Brown Sugar
1 Teaspoon Vanilla

Mix, then add.

1 Teaspoon Salt
1/2 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/3 Cup Cocoa
1 2/3 Cup GF Flour (I used half Brown Rice and half Tapioca Flour)
2 Cups Shredded Zucchini

Mix, then fold in

Chocolate Chips (as much as you would like)

Pour into a prepared pan, and bake about 60 plus minutes at 350 degrees. You know when the bread is done when the fork is clean. I use a fork to test. Actually mom does as she doesn't allow me to open the oven well it's on!

Chicken Stir-Fry

Easy Peasy Chicken Stir-Fry, this one falls under a 30 minute meal. First get out your wok and oil it up. Get the garlic going.



Have mom cut up the chicken and start to cook up the chicken a bit.


Add some fish sauce. Important note I DON'T MEASURE. Just add in a good amount.


Sprinkle with some good Sea Salt, DON"T skimp on the sea salt. Buy some really good Sea Salt.


When chicken is brown, add is some Coconut Amino's


Sprinkle a little Brown Sugar


Add in some Organic Broccoli. Nummer (NOT)!


Give it a good stir and let it cook for a good minute.


Add in your pasta. OH remind me to tell you about the pasta.



Let it cook for a good minute or so and serve.


Before you start the garlic get a pot of water going, Once the water is boiling, add in stir fry rice noodles, turn off heat and set aside. It will cook well you start the chicken, and be ready for you when you are ready to add it to the stir fry.

Make Your Own Baking Powder

Hi! First post I'm soooooo EXCITED!!!!  Well I was in the kitchen this morning with Mom and she had me make baking powder because we were out. We make our own because we are corn free and it's pricey to buy baking powder corn free. It's so simple even a three year old could make baking powder. 1 teaspoon baking soda, 2 teaspoons cream of tarter. Mix and store.



Like my measuring spoons? Santa brought them. I use them all the time. See how much I made! Now you go and do it.
